Our specialty lies in our handcrafted nihachi soba (buckwheat noodles), meticulously made from locally sourced buckwheat grown in Hakuba. We grind the buckwheat on a millstone, acquiring it directly from the producer.

We specifically chose Hakuba’s buckwheat flour because we believe that consuming buckwheat cultivated in this region is the epitome of an ideal food.

In winter, we serve creative udon made with our original homemade pork bone broth. In summer, we offer a reservation-only course menu based on the concept of local production for local consumption.

Our homemade udon soup is gently simmered for 10 hours using Shinshu pork to create a rich, flavorful tonkotsu broth, blended with plenty of locally grown Shinshu vegetables to create a light yet slightly Western-style soup. Customize your own original udon with toppings like lotus root and pumpkin tempura, shrimp tempura, kimchi, and more.

For dessert, we offer Luna organic raw cakes that are both vegan and gluten-free.

Andrea Ferrero is the creative mind behind Stars’n Cacio. Andrea has been a chef since his youth and worked as Executive Chef in some of the world’s finest hotels, like the Bulgari Hotel in Milan and Shangri-La Hotel, Tokyo.

What sets Andrea apart from other chefs is that he is a curator by heart. He does not only select the best ingredients for his dishes and presents them skillfully, he invents the drinks, creates or selects the art displayed in the restaurant, curates the music, the staff outfits and all the small details that make Stars’n Cacio a one-of-a-kind lifestyle brand.

Nikuekiteisha is a casual Japanese izakaya operated by **HAKUBA CRAFT**, a craft brewery born in Hakuba and Otari.

Reopened in July 2026, our restaurant specializes in charcoal-grilled meat dishes, prepared right before your eyes in our open kitchen. We carefully select our charcoal to bring out the rich flavors and aroma of every ingredient.
